Cantina Pedregal: A New Era of Fine Dining in Sacramento
The Sacramento area is about to experience a culinary revolution with the opening of Cantina Pedregal. Located in the Folsom Pointe shopping center, this Northeastern Mexican fine dining restaurant promises to deliver an unprecedented dining experience. With its grand opening set for Monday, Cantina Pedregal combines the rich, authentic flavors of Nixtaco Kitchen & Distillery with the elevated culinary techniques of Canon and Franquette partners, Brad Cecchi and Clay Nutting.

cantina pedregalCantina Pedregal will offer an exquisite menu of small plates, shareable platters, and seasonal ingredients, reminiscent of the Michelin-recognized Canon. The restaurant’s cuisine will be deeply rooted in the flavors of Monterrey, the hometown of co-owners Patricio Wise and Cinthia Martinez. Their collaboration with Cecchi and Nutting ensures a fine dining experience that stands alongside Sacramento’s best, such as Ella Dining Room & Bar and Camden Spit & Larder.

Chef de cuisine Bucky Bray, an alumnus of Canon and The Kitchen, will lead the culinary team, while general manager Paolo Ruffi, formerly of Michael Chiarello’s Bottega, will oversee operations. Together, they will bring thoughtful service touches and an atmosphere that celebrates both the heritage and innovation of Northeastern Mexican cuisine.

Signature dishes include cabrito al pastor, a traditional kid goat dish, and cazuela de asado Norteño, featuring diced pork belly in an orange-guajillo chile stew. The menu will also feature creative twists on classics, like esquites with Brentwood corn and peanut chipotle salsa, and queso panela charred in the Vesuvio grill.

Cantina Pedregal’s bar program, led by Chris Mansury, will offer bespoke infusions and bitters, complementing a curated wine list from the Sierra Nevada foothills and South America. The vibrant and energetic atmosphere will transform into a more intimate and “sexy” setting as the evening progresses.

Cantina Pedregal will be open from 11 a.m. to 9 p.m. daily, offering both lunch and dinner. With more than half of its opening week reservations already claimed, this new addition to Sacramento’s dining scene is set to make a significant impact.
